Seven Minute Frosting
My family loves winter sports and this is the perfect winter white frosting for decorating winter-themed holiday cakes! This recipe is from Better Homes & Gardens, but this is just like the frosting my mom used to make years ago! Once prepared this frosting holds its shape and is perfect for creating drifts of winter snow icing!
Servings: 4 cups
Equipment
- Double boiler
- electric mixer
Ingredients
- 1½ cups sugar
- ⅓ cup cold water
- ¼ tsp cream of tartar (or 2 tsp light-colored corn syrup)
- 1 tsp vanilla extract
Instructions
- In the top of a double boiler combine sugar, cold water, egg whites, and cream of tartar (or corn syrup). Using an electric mixer, beat on low speed for 30 seconds.
- Place over boiling water (upper pan should not touch water).
- Cook, beating constantly with the electric mixer on high speed, about 7 minutes or until frosting forms stiff peaks.
- Remove from the heat; add vanilla. Beat 2 to 3 minutes more or until frosting reaches spreading consistency.
Notes
This frosts the tops and sides of two 8- or 9-inch cake layers or one 10-inch tube cake. Store frosted cake in the refrigerator and serve the same day it is made.
Note: You can substitute 2 teaspoons of light-colored corn syrup in place of cream of tarter, however, I recommend cream of tartar.
