Low-Carb Taco Salad

- large salad bowl
Ingredients
- 1 lb lean ground beef
- 1 tbsp chili powder
- 8 green onions (white and green parts separated)
- 1 head romaine lettuce
- 1 medium tomato (chopped)
- 1 avocado (diced)
- 1½ cups fat-free cheese (Cheddar, Monterey Jack, or mix)
- ½ cup fat-free Greek or plain yogurt
- ½ cup salsa
Instructions
- Brown beef in skillet with chilil powder, white parts of onions, salt, and pepper. If you want the beef warm, cover the pan; if you want it chilled, place it in the refrigerator until ready.
- In a large bowl, mix lettuce, tomato, avocado, and green onion. Once mixed, add the meat and cheese and gently toss together.
- Top with a bit of yogurt and salsa.
