Low-Carb Taco Salad

  • large salad bowl


  • 1 lb lean ground beef
  • 1 tbsp chili powder
  • 8 green onions (white and green parts separated)
  • 1 head romaine lettuce
  • 1 medium tomato (chopped)
  • 1 avocado (diced)
  • cups fat-free cheese (Cheddar, Monterey Jack, or mix)
  • ½ cup fat-free Greek or plain yogurt
  • ½ cup salsa


  • Brown beef in skillet with chilil powder, white parts of onions, salt, and pepper. If you want the beef warm, cover the pan; if you want it chilled, place it in the refrigerator until ready.
  • In a large bowl, mix lettuce, tomato, avocado, and green onion. Once mixed, add the meat and cheese and gently toss together.
  • Top with a bit of yogurt and salsa.
