Italian Wedding Soup
Equipment
- large sauce pan
Ingredients
- 1 package chopped turkey
- 2 or 3 large cans chicken broth
- 1 frozen cube of chopped spinach
- 2 shakes garlic powder
- 2 shakes onion powder
- 1 tbsp fresh chopped parsley
- salt and pepper to taste
- acini de pepe (small dots pasta)
- olive oil
Instructions
- In a large sauce pot, pour in chicken broth, spinach and spices.
- Bring to a boil and then simmer.
- As broth is cooking, roll chopped turkey into tiny balls and keep adding to soup until completed.
- Let cook another 15 minutes, then raise heat to a boil and add about a quarter or more of the box of acini de pepe.
- Stir, and once tender, pour a little olive oil on top and serve.
