Italian Wedding Soup

  • large sauce pan


  • 1 package chopped turkey
  • 2 or 3 large cans chicken broth
  • 1 frozen cube of chopped spinach
  • 2 shakes garlic powder
  • 2 shakes onion powder
  • 1 tbsp fresh chopped parsley
  • salt and pepper to taste
  • acini de pepe (small dots pasta)
  • olive oil


  • In a large sauce pot, pour in chicken broth, spinach and spices.
  • Bring to a boil and then simmer.
  • As broth is cooking, roll chopped turkey into tiny balls and keep adding to soup until completed.
  • Let cook another 15 minutes, then raise heat to a boil and add about a quarter or more of the box of acini de pepe.
  • Stir, and once tender, pour a little olive oil on top and serve.
