Easy Breakfast Muffins

Equipment

  • 12 cup muffin pan
  • large bowl

Ingredients

  • 1 egg
  • ¾ cup milk
  • ½ cup canola oil
  • 2 cups all-purpose or whole wheat flour
  • cup sugar
  • 3 tsp baking powder
  • 1 tsp salt

Topping

  • ¼ cup brown sugar
  • ½ tsp cinnamon
  • ¼ cup chopped nuts (optional)

For Berry Muffins

  • 1 cup fresh blueberries or raspberries (½ cup if frozen)

Instructions

  • Preheat oven to 400°F. Grease 12 cup muffin pan.
  • In a large bowl, beat egg with a fork, stir in milk and oil.
  • Stir in remaining ingredients just until flour is moistened (will be lumpy).
  • Fill muffin cups ½-¾ cup full. Sprinkle with topping mixture.
  • Bake for 15 minutes.
