Easy Breakfast Muffins
Equipment
- 12 cup muffin pan
- large bowl
Ingredients
- 1 egg
- ¾ cup milk
- ½ cup canola oil
- 2 cups all-purpose or whole wheat flour
- ⅓ cup sugar
- 3 tsp baking powder
- 1 tsp salt
Topping
- ¼ cup brown sugar
- ½ tsp cinnamon
- ¼ cup chopped nuts (optional)
For Berry Muffins
- 1 cup fresh blueberries or raspberries (½ cup if frozen)
Instructions
- Preheat oven to 400°F. Grease 12 cup muffin pan.
- In a large bowl, beat egg with a fork, stir in milk and oil.
- Stir in remaining ingredients just until flour is moistened (will be lumpy).
- Fill muffin cups ½-¾ cup full. Sprinkle with topping mixture.
- Bake for 15 minutes.
